Chocolate Pancakes with Coffee Whipped Cream & Granola

Nothing says “I love you” like a decadent and chocolatey recipe.
With the precious collaboration of Evive Nutrition, we created the perfect combination of chocolate and coffee, with their Azteque smoothie and our White Chocolate & Coffee granola.

INGREDIENTS

 

Pancakes

 

1 wheel of Evive Nutrition Azteque smoothie
1½ cup Oatbox oat m*lk
1 egg or ¼ cup unsweetened applesauce
1 tsp vanilla extract
1 cup all-purpose flour
⅓ cup cocoa powder
1 tsp baking powder
¼ tsp salt

 

Topping

 

1½ cups plant-based whipping cream (Silk or Cha’s Organics)
¼ cup maple syrup
2 tbsp espresso shot
Oatbox White Chocolate & Coffee granola, to taste

 

PREPARATION

 

 1. In a blender, mix 8 cubes of Azteque smoothie with the oat m*lk.

2. Heat a griddle or pan at medium-low heat.

3. In a bowl, combine 1½ cups of the smoothie, the egg and vanilla extract. In a separate bowl, combine the rest of the ingredients. Stir the wet ingredients into the dry ones until just combined.

4. Pour about ¼ of the mixture for each pancake on the griddle or pan. Cook until the sides just start to harden. Flip and cook for another 4-5 minutes.

5. Make the whipped cream by combining the cream, maple syrup and coffee and whipping with a hand mixer until you get stiff peaks.

6. Top the pancakes with the whipped cream and Oatbox White Chocolate & Coffee granola to taste.
