Banana and dark Chocolate Granola Muffins

Bake these muffins that are the perfect snack during a long day of working. The bananas and the applesauce bring an exceptional softness to this recipe. You can vary the granola used in the dough and in topping to vary the pleasures according to your cravings.

INGREDIENTS


3 rip bananas, peeled and mashed
1/2 cup of plant-based yogurt
1 cup of flour
2 tsp of baking powder
1 tsp of baking soda
1/2 cup of oil
1/2 cup of sugar
2 eggs or 130 g of unsweetened applesauce
1 cup of oat milk
1 cup of Oatbox Dark Chocolate Fusion Granola

 

PREPARATION


1. Preheat oven to 350°F.

2. Mix together the flour, baking powder and baking soda.

3. In another bowl, beat the oil and sugar. Add the bananas, then the eggs or applesauce, and yogurt, and mix thoroughly. Incorporate half of the dry ingredients alternately with the milk. Once the mixture is smooth, add the granola.

4. Fill your muffin moulds and add some extra granola on top for a nice presentation.

5. Bake for 25 minutes or until a toothpick comes out clean.
