Blueberries in the Spotlight: 3 Recipes!

It's blueberry season! Let's make the most of it by adding these colorful, flavor-filled berries to our plates. Bonus: they're an excellent source of vitamin C, vitamin K and antioxidants.

 

 Blueberry Nice Cream

Ingredients

- 2 frozen bananas

- 2 cups frozen blueberries

- 2 cups Oatbox Barista Oat Beverage

- Almond Butter Blueberry Granola for topping

 

Preparation

1. Blend frozen bananas, frozen blueberries and oat beverage in a high-speed blender.

2. Serve immediately in a bowl or cone and top with our Almond Butter Blueberry Granola.

Optional steps:

3. Pour mixture into an ice cube tray and freeze for a few hours.

4. Blend frozen cubes in blender for a texture similar to ice cream.

5. Serve immediately in a bowl or cone and top with our Almond Butter Blueberry Granola.

 

 

 Blueberry & Vanilla Overnight Oats (Proteinated)

Ingredients

1/3 cup Field Berries overnight oats

- 1 cup Oatbox Original oat beverage

- ⅓ cup frozen blueberries

- 18g ( ½ scoop) vanilla protein

- Fresh blueberries, granola and almond butter for garnish.

  

Preparation

1. Blend together the Field Berries overnight oats, protein powder and Oatbox Original oat beverage. Add frozen blueberries and mix well.

2. Let stand at least 6 hours or overnight.

3. Garnish with fresh blueberries, granola and almond butter!

 

 

 Blueberry Scones

Ingredients

1 ½ cups flour

- 2 tablespoons baking powder

- ¼ cup sugar

- ¼ cup frozen blueberries

- 1 pinch salt

- ½ cup cold butter, cubed

- 1 cup Oatbox Original oat beverage

  

Preparation

1. In a bowl, combine dry ingredients and blueberries.

2. Add butter and mix with a pastry blender.

3. Add oat beverage and mix, again with pastry blender.

4. Knead dough just until smooth, but not sticky. Rectify with liquid or flour if necessary.

5. On a floured work surface, roll out dough to 2-3 cm thickness.

6. Cut into rounds or triangles and transfer to a parchment-lined baking sheet.

7. Let stand at room temperature for 30 minutes.

8. Meanwhile, preheat oven to 350°F.

9. Bake scones for 15 to 20 minutes, or until golden brown. Rest before serving.
