Inspired by Indian tradition, this revisited Lassi combines our Original Oat Beverage and a plant-based yogurt for a light, 100% vegan version.
The sweetness of peaches, the creaminess of our oat m*lk and a hint of cardamom create a balanced marriage of flavors. Try it without hesitation!

Ingredients
- 1 cup (packed) peaches
- 1/2 cup Oatbox's Original Oat Beverage
- 1/3 cup plant-based yogurt
- 1/3 cup soft tofu
- 3 deglet nour dates
- 1/8 tsp ground cardamom
- 5 ice cubes
Garnish option: 2 tbs Kerman pistachios
Preparation
1. Soak the deglet nour dates in hot water to soften them.
2. Lightly toast the pistachios in a skillet over medium heat until they release a pleasant aroma, about 2-3 minutes. Let the pistachios cool, then chop them coarsely for garnish.
3. Mesure and prepare the other ingredients, and place them in a blender, including the softened and drained dates.
4. Blend all the ingredients on high speed until smooth and creamy.
5. Pour the lassi into glasses, add the chopped pistachios on top for garnish.
