The Best Vegan Birthday Cake

Ingredients

Cake:

 - 1 cup Oatbox Original Oat Beverage

- 1 tbsp. white vinegar

- 2 cups all-purpose flour

- 1 tsp. baking powder

- 1/2 tsp. baking soda

- 1/4 tsp. salt

- 2 tbsp. sprinkles

- 2/3 cup sugar

- 1/3 cup vegetable oil

- 1 tsp. light vanilla extract

- Oatbox white chocolate and raspberry granola for garnish

 

Icing:

- 3/4 cup sugar

- 1/3 cup flour

- 340 ml Oatbox Original Oat Beverage

- 1 1/2 cups vegan butter (3 sticks), at room temperature

- 1 1/2 tsp. light vanilla extract

- 1/4 tsp. Salt

 

 

Preparation

Prepare the cake:

1. Preheat oven to 350°F (175°C).
2. Prepare the pans: Grease four 6“ round pans (for a four-tier cake) or two 9” pans (for a two-tier cake) with cooking spray. Place parchment paper on the bottom and grease again.
3. Prepare the vegan buttermilk: In a small bowl, mix the Oatbox Original Oat beverage with the vinegar. Set aside.
4. Mix dry ingredients: In a large bowl, whisk flour, baking powder, baking soda, salt and confetti.
5. Mix liquid ingredients: In a medium bowl, whisk together sugar, vegetable oil and light vanilla extract. Stir in the vegan buttermilk mixture.
6. Combine dry and liquid ingredients: Pour the liquid mixture into the bowl of dry ingredients and whisk until smooth.


      Prepare the icing:

      1. Once the cake is in the oven, prepare the icing base: In a medium saucepan, mix the sugar and flour. Slowly add the Oatbox Original Oat Beverage. Whisking continuously, heat over medium-high heat until simmering, then continue whisking for a further 3 minutes, until the mixture thickens to a pudding-like texture.
      2. Cool the mixture: Pour the mixture into a stand mixer bowl and cover with plastic wrap, placing it directly on the surface to prevent a crust from forming. Leave to cool to room temperature.
      3. Whip the icing: Using the paddle attachment, whip the cooled Oatbox Original oat beverage mixture on medium-high speed. Gradually add the vegan butter, 1 to 2 tbsp at a time, then the salt and vanilla extract. Whip on high speed for about 5 minutes, until light and fluffy.

           

          Tips & tricks:

          - If the icing is too runny, refrigerate for 20 minutes before upsetting.
          - If it separates, place the bowl over a bain-marie until the edges begin to melt gently, then mix so that it is smooth.
          - Layer and frost: Place each cake layer upside down (mold edge up) for a smooth surface. Add a good layer of icing between each layer.
          - Decorate: Frost the top and sides, then decorate with raspberry and white chocolate granola, and additional sprinkles.
